DESCRIPTION AND SUGGESTIONS
Rubicone Yuzu Paste is a concentrated flavouring paste for artisan gelato with a yuzu taste, with a citrusy, aromatic and brightly tangy profile.
A concentrated paste like Yuzu Paste saves preparation time, as you simply weigh, mix and batch-freeze; being vegan and dairy-free, it also works in water-based mixes.
Ideal for: cream gelato in the display, sundaes, semifreddi and desserts, in gelato shops and pastry labs.
Features: vegan, dairy-free, gluten-free, Halal certified.
Directions: add the paste to the base, mix well and batch-freeze.
Dosage: 80 g per litre or 65 g per kg of mix.
