DESCRIPTION AND SUGGESTIONS
Rubicone Pop Corn Paste is a concentrated flavouring paste for artisan gelato with the characteristic popcorn taste, with a sweet, toasted and pleasantly savoury profile.
Pop Corn Paste lets you offer this flavour with a simple, consistent process that suits any lab; being vegan and dairy-free, it also works in water-based mixes.
Ideal for: cream gelato in the display, sundaes, semifreddi and desserts, in gelato shops and pastry labs.
Features: vegan, dairy-free, gluten-free.
Directions: add the paste to the base, mix well and batch-freeze.
Dosage: 80 g per litre or 65 g per kg of mix.
