DESCRIPTION AND SUGGESTIONS
Martini Gelato Biancolatte 150 is a pre-balanced, milk-rich powder base with refined vegetable fats, for extremely creamy artisan gelato with a milk taste.
It also suits gelato displayed high in the pan and, with a little cream, gives a full, rounded fior di latte.
Ideal for: creamy fior di latte and high displays.
Features: gluten-free, no hydrogenated fats, Halal certified.
Directions: blend base and sugar, add to milk and cream, pasteurise and batch-freeze.
Dosage: 150 g of base and 225 g of sugar per 1 litre of milk + 50 g of cream.
Processing: hot.
