DESCRIPTION AND SUGGESTIONS
Martini Gelato Biancolatte 100 S.A. is a flavouring-free powder base with a natural milk taste, thanks to its high milk and dairy content.
It gives gelato excellent silkiness and stability, enhancing the taste of added pastes; ideal for a clean-tasting fior di latte.
Ideal for: fior di latte, cream flavours and premium pastes.
Features: gluten-free, no hydrogenated fats, no added flavourings, Halal certified.
Directions: blend base and sugar, add to the milk, pasteurise and batch-freeze.
Dosage: 100 g of base and 230-250 g of sugar per 1 litre of milk.
Processing: hot.
