Martini Gelato Biancolatte 125 S.A. is a flavouring-free powder base, with refined vegetable fats and milk proteins, designed for gelato displayed in high mounds.
Its structure holds gelato high in the pan without sagging, for a striking display, while the lack of flavourings enhances every flavour.
Ideal for: high-mound displays and cream flavours.
Features: gluten-free, no hydrogenated fats, no added flavourings.
Directions: blend base and sugar, add to the milk, pasteurise and batch-freeze.
Dosage: 125 g of base and 250 g of sugar per 1 litre of milk.
Processing: hot.
