A concentrated paste like Pistacchio Extra paste saves preparation time, as you simply weigh, mix and batch-freeze; it gives a full, recognisable flavour, ready to batch-freeze.
Ideal for: pistachio gelato for high volumes.
Features: gluten-free.
Directions: add the paste to the white base, mix well and batch-freeze.
Dosage: 80 g per kg of mix.
