Leagel Lea Pan 50 base is the classic base of the Lea Pan line: low dosage, milk and cream flavour and coconut fat, for hot processing.
Ideal for: fior di latte, cream and chocolate flavours.
Features: flavour: latte, panna, fats: vegetable (coconut), gluten-free.
Directions: dissolve base and sugar in milk, pasteurise and batch-freeze.
Dosage: 35 g per kg of mix.
Processing: hot (85 °C).
