DESCRIPTION AND SUGGESTIONS
Martini Gelato Smarty 450 G.A. is a complete powder base with animal fats for making artisan gelato without pasteurisation.
It is an alternative to classic dosage bases: with warm water and a little cream you get gelato ready in a short time.
Ideal for: kitchens without a pasteuriser and quick production.
Features: gluten-free, no hydrogenated fats.
Directions: blend the base with water at 50 °C and cream, mix and batch-freeze without pasteurising.
Dosage: 450 g of base + 900 g of warm water (50 °C) + 150 g of cream.
