DESCRIPTION AND SUGGESTIONS
Leagel Classic 50 base is a fat-free, low-dosage milk base: because it contains no fat it works well with fat-rich pastes (hazelnut, pistachio, chocolate) and is easy to formulate.
Classic 50 base leaves room for the taste of pastes and ripples, which stay centre stage in the display; it simplifies the work, with a single dose to weigh.
Ideal for: hazelnut, pistachio and chocolate gelato, fior di latte.
Features: flavour: latte, fat-free, gluten-free.
Directions: dissolve base and sugar in milk, pasteurise and batch-freeze.
Dosage: 35 g per kg of mix.
Processing: hot (85 °C).
