DESCRIPTION AND SUGGESTIONS
Martini Gelato Superpanna is a powder base without vegetable fats, rich in cream powder, for creamy artisan gelato with a rich cream taste.
It has excellent overrun and is also ideal for high displays in the pan, for an indulgent, eye-catching fior di latte.
Ideal for: cream fior di latte and high-mound displays.
Features: gluten-free, no hydrogenated fats.
Directions: blend base and sugar, add to the milk, pasteurise and batch-freeze.
Dosage: 100 g of base and 230-250 g of sugar per 1 litre of milk.
Processing: hot.
