DESCRIPTION AND SUGGESTIONS
This version of Leagel Vaniglia Gold paste is also designed for pastry: Madagascar Bourbon vanilla and Sicilian citrus essential oils for creams, crème brûlée, mousses and gelato.
In the Leagel Double Caramel recipe, Vaniglia Gold paste is paired with Stickaway Cioccolato al Latte and Loveria Caramello; it saves preparation time in the lab.
Ideal for: pastry cream, crème brûlée, mousses and gelato.
Features: vegan, gluten-free.
Directions: add the paste to the white base, mix well and batch-freeze.
Dosage: 30 g per kg of mix.
