Rubicone Base Lemon 50 is a powder base for artisan gelato, vegan and dairy-free; lemon sorbet with stabilizers and flavors.

With Base Lemon 50, every batch starts from the same structure, so the gelato in the display stays consistent day after day.

Ideal for: sorbets and fruit gelato in the gelato lab.

Features: vegan, dairy-free, gluten-free, Halal certified, Kosher certified.

Directions: dissolve base and sugar in the water and batch-freeze.

Dosage: 50 g of base and 430 g of sugar per 1 litre of water.

Processing: cold.
