Ideal for: creamy fruit gelato and structured sorbets.

Features: fats: vegetable (coconut), gluten-free.

Directions: dissolve base and sugar in water and fruit and batch-freeze.

Dosage: 70 g per kg of mix.

Processing: hot (85 °C) or cold.
