Cioccogel base, 72% dark chocolate discs and red cocoa give a full, inimitable dark chocolate, vegan and gluten-free.

Ideal for: premium dark chocolate and vegan menus.

Kit contents: Cioccogel base, Aymara 72% dark chocolate discs and Ariba 20/22 red cocoa.

Features: gluten-free, vegan, no hydrogenated fats.

Directions: dissolve all the ingredients in boiling water, allow to cool and batch-freeze.

Dosage: 1.5 kg of Cioccogel + 2.3 kg of boiling water + 1 kg of 72% dark discs + 300 g of cocoa + 150 g of dextrose.
