Leagel Seleção is a blend of fine cocoas with 22-24% cocoa butter, designed for full-flavoured chocolate gelato when added to the white mix.

At a modest dosage, Seleção gives the mix a full, recognisable flavour; it is a simple way to widen the display.

Ideal for: chocolate gelato, cocoa sorbet and hot chocolate.

Features: gluten-free.

Directions: add it to the white mix, pasteurise and batch-freeze.

Dosage: 50–100 g per kg of mix.
