DESCRIPTION AND SUGGESTIONS
Martini Gelato Gold 50 F.C. is a powder base without vegetable fats, rich in milk powder, for artisan cream gelato with a milk taste.
It works both hot and cold, offers excellent stability and is also ideal with an automatic dispenser.
Ideal for: cream flavours, dispensers and kitchens without a pasteuriser.
Features: gluten-free, no hydrogenated fats, Halal certified.
Directions: blend base and sugar with the milk, pasteurise or process cold, then batch-freeze.
Dosage: 50 g of base and 230-250 g of sugar per 1 litre of milk.
Processing: hot or cold.
