DESCRIPTION AND SUGGESTIONS
Martini Gelato Nuvole 100 is a low-fat powder base, without vegetable fats, for artisan gelato with a milk and cream taste and excellent creaminess.
Its creaminess comes from a balance of different sugars, ensuring excellent scoopability and display holding.
Ideal for: lighter fior di latte and cream flavours.
Features: gluten-free, no hydrogenated fats.
Directions: blend base and sugar, add to the milk, pasteurise and batch-freeze.
Dosage: 100 g of base and 200-230 g of sugar per 1 litre of milk.
Processing: hot.
