DESCRIPTION AND SUGGESTIONS

Martini Gelato Superlatte 100 is a powder base with refined vegetable fats for artisan gelato with a milk and cream taste and excellent scoopability.

The gelato stays soft under the spatula with good overrun, ideal for cream flavours served quickly at busy times.

Ideal for: cream flavours and fast service.

Features: gluten-free, no hydrogenated fats.

Directions: blend base and sugar, add to the milk, pasteurise and batch-freeze.

Dosage: 100 g of base and 200-230 g of sugar per 1 litre of milk.

Processing: hot.
