BASE CHOCO FAST
A base for chocolate gelato extremely versatile. Batch freezer, Soft Machine and frozen cream machines.
Rich and intense, Chocofast is the perfect blend of real chocolate flavor and the versatility of a unique product. Thanks to a special mix of premium cocoas from different plantations and countries, Toschi has created the ideal chocolate base for the most refined palates—offering artisan gelato makers a wide range of delicious possibilities.
Chocofast is extremely versatile and can be used in a classic batch freezer, soft serve machine, or granita machine.
Slowly mix the product into water, stirring vigorously with a whisk until you get a thick and smooth mixture. Let it rest for at least 10 minutes. For best results, we recommend pasteurizing at 85°C. Then proceed to prepare your desired chocolate gelato, which can be served as is or decorated with a variegate.
DOSAGE
For dark chocolate: 1.8 kg of Chocofast + 2.5 liters of water
For milk chocolate: 1.8 kg of Chocofast + 1.5 kg of water + 1 kg of whole milk
Tip: The gelato, whether dark or milk chocolate, can be enjoyed on its own or paired with Toschi's candied orange peel strips in light syrup or Toschi Amarena cherries.
