Toschi Sicilian Pistacchio del Regno paste is made with 100% Bronte pistachios and a pinch of chlorophyll for a bright green colour. An outstanding paste for pistachio gelato with a full, authentic flavour.
Ideal for: premium pistachio gelato, semifreddi, pralines and pastry creams.
Directions: mix the paste into the base (water or milk), leave for 30 minutes and batch-freeze.
Dosage: 80–100 g of paste per kg of base mix.
