DESCRIPTION AND SUGGESTIONS

Thanks to freeze-dried ricotta, Elenka’s Sicilian Cassata Paste gives gelato the true taste of cassata, with all the aroma of the traditional dessert.

Also used for cakes and semifreddo. Add candied fruit during extraction.

DOSAGE
Gelato: 35/60 g per 1000 g of base mix.
Pastry: 45 g per 1000 g of custard or cream.
