Elenka’s Sicilian Cassata Paste with candied fruit is a high-quality paste preparation for professional gelato and fine pastry.
Thanks to freeze-dried ricotta and candied fruit, it gives mixes the authentic taste of the traditional Sicilian dessert. Designed mainly for gelato, it is also used in cakes, semifreddo and creative recipes with a strong regional identity.
DOSAGE: 200 g of Cassata + 100 g of whole milk per 1000 g of base mix.
