Elenka’s Unsweetened Cocoa Powder is a blend of fine cocoas with 22/24% cocoa butter.
The quality of the blends ensures an intense, lasting and authentic chocolate taste. It also performs well in pastry, for doughs, creams and decorations.
DOSAGE: gelato 70 g of cocoa + 20 g of dextrose per 1000 g of hot base mix.
