Yuzu Gelato Paste Rubicone is a concentrated flavouring paste for artisan gelato with a yuzu taste, with a citrusy, aromatic and brightly tangy profile.

Yuzu, the Japanese citrus, gives an aromatic, lively, tangy sorbet, between lemon and mandarin; vegan. It is ideal for creamy gelato and desserts with a pleasant lingering finish.

Ideal for: cream gelato in the display, sundaes, semifreddi and desserts, in gelato shops and pastry labs.

Directions: add the paste to the base, mix well and batch-freeze.
