Chocofast is an extremely versatile product and can be used with the batch freezer, Soft serve Machine or like a frozen cream.
Dissolve the product in water with a whisk until you get a creamy solution. Let the mixture rest about 10 minutes. At this point for an excellent result it is advisable to pasteurize at 85 ° C.
Dosage for dark chocolate: 1.5 kg of Chocofast + 2.7 liters of water
For milk Chocolate: 1.5 kg by Chocofast + 1.7 kg of water + 1 kg of whole milk
